4 small zucchini
200g feta cheese
1 bunch fresh chives, thinly sliced
3 heaped Tbsp chickpea or wholegrain flour
2 tsp baking powder
8 eggs, whisked
salt and pepper
Optional: extra fresh herbs and chilli
Preheat oven to 180 degrees celsius. In large mixing bowl: grate zucchini. Add roughly chopped feta, and remaining ingredients. Stir well to combine. Pour mixture into a 20x20cm baking dish or similar size. Place in oven to cook for 40-50mins, or until lightly browned and cooked through (a skewer should come out clean when inserted). Serve with a side salad or some leafy greens.
