Baked Porridge

Recipe (serves 4)


2 cups rolled oats

2 Tbsp chia seeds

1/2 cup shredded coconut

1 cup frozen berries

1 banana, sliced

1/2 tsp cinnamon

2 cups of milk of choice

1 egg

Optional: 2 tsp maple syrup or honey


Preheat oven to fan forced: 180 degrees celsius. You will need a baking dish of approximate size 20x20 cm. Whisk egg and milk together in a small bowl until combined. Put all other ingredients into the baking dish and stir to combine. Then add milk/egg mix and give the whole mixture another stir through. Place in oven and cook for 45-60mins (dependant on your oven) or until cooked through and lightly browned on top. Serve straight away, or cook this on the weekend to enjoy during the week. Best served warm with a good dollop of greek yoghurt. Enjoy!
